A fermenting agent for raw material, and alcoholic drinks by using the same fermenting agent are provided to ferment raw materials for various kinds of alcoholic drinks, reduce the fermentation time, and improve taste and flavor of alcoholic drinks. The method for preparing the fermenting agent for raw materials comprises the steps of: mixing rice Nuruk with water, heating the mixture at 50-75 deg.C for 2-4 hours, and filtering it to prepare rice Nuruk gruel; preparing yeast culture solution by using the rice Nuruk gruel; mixing malt powder with water, heating the mixture at 40-75 deg. C for 2-4 hours, cooling the mixture to 40 deg.C, adding the white of egg into the mixture, boiling the mixture at 90-100 deg.C, and filtering it to prepare malt juice; and mixing the rice Nuruk gruel with malt juice, inoculating the yeast culture solution into the mixture and fermenting it at 20-35 deg.C for 20-24 hours. |
