摘要 A method for mayonnaise preparation consists in screening of recipe components, preparation of mayonnaise paste (without sugar and salt), processing in rotary alternating electromagnetic field in the presence of ferromagnetic particles in process capacity of VA-100 device, mixing, addition of oil, sugar and salt. The rate of oil introduction is changed from 0.0012 to 0.007 litres per sec.
