Provided is a method for cooking a meat for Bossam in which the efficacy of bamboo and loess is provided in a cooking procedure of the meat, so as to obtain a quality of cooked meat, and which has shortened cooking time and needs a simple preparation for cooking. The method for cooking the meat comprises the steps of (i) cutting a meat(10) into predetermined size, (ii) aging the cut meat in a refrigerated condition for 1 day, (iii) covering the aged meat with cover of fabric woven out of cotton yarn and Korean paper, (iv) further covering the meat(10) with bamboo blind(50) having applied loess(60), provided that open side-parts formed by roll-covering the meat(10) with the bamboo blind are sealed with loess(60), (v) introducing the meat(10) into furnace, and (vi) cooking the meat by heating.
