PROBLEM TO BE SOLVED: To provide a method for controlling a cooling process according to the state of the food to be cooled. SOLUTION: A food is cooled in a cooling chamber having controllable temperature. A cooling process composed of individual steps for cooling the center temperature of the food to a prescribed temperature (Tf) is carried out when the temperature in the cooling chamber is lower than a prescribed temperature (K1) and the center temperature of the cooling food is lower than a prescribed temperature (H2). An additional condition is specified to confirm whether the temperature lowering trend and speed at the food center part meets the requirement of the applied standard specification before the cooling process proceeds the final stage of the cooling treatment.
