<P>PROBLEM TO BE SOLVED: To produce sprouted brown rice by sprouting rice grain in air to prevent the loss of nutrients and drying at a low temperature to prevent the formation of checked rice. <P>SOLUTION: Sprouted brown rice is produced by immersing dried unhulled rice in water at 20-25°C for 20-30 hr, draining the immersed rice and sprouting the rice by keeping in a circulating humidified air atmosphere at 25-30°C for 20-30 hr.
