The invention relates to a pulverulent composition containing finely ground roast coffee powder that is embedded in a matrix. The inclusion of the roast coffee powder in the matrix ensures effective protection against oxidation, thus preserving the organoleptic characteristics of the roast coffee powder, in particular the flavour and aroma. Said pulverulent composition is particularly suitable for incorporation into instant beverages containing coffee and/or cocoa, in particular cappuccino beverages. In this manner the favourable characteristics of fresh roast coffee can be imparted to said beverages, thus optimising the flavour of the instant beverages.
