PROBLEM TO BE SOLVED: To provide a stirring and defoaming method which can prevent a material from varying in its finished quality caused by its temperature change, and a stirring and defoaming apparatus. SOLUTION: The stirring and defoaming method for stirring and defoaming the material M by rotating a material M-housed vessel 15 on its own axis while revolving it around a revolving axis comprises the steps of: directly or indirectly detecting the temperature of the material M; and adjusting/controlling at least one of the orbital speed and rotational speed of the vessel 15 on the basis of the detected temperature (for example, when detected that the detected temperature reaches the predetermined one).
