PROBLEM TO BE SOLVED: To provide a desalting and dewatering method to provide high-quality garbage as a raw material for a succeeding processes of drying, composting and carbonizing treatments, by crushing garbage and desalting salts uniformly to a low concentration in a short time. SOLUTION: In this desalting and dewatering method, garbage is crushed together with water; the garbage is desalted and dewatered by rotating the basket of a centrifugal dewatering device at a first given speed; separated water by centrifugal dewatering is circulated and dewatered by being absorbed in the garbage; a variation ratio of an electric conductivity (EC) of the separated water is measured; circulation to the centrifugal dewatering device is stopped when the variation ratio has decreased to a given value or lower; and the speed of the basket of the centrifugal dewatering device is switched to a second given speed faster than the first speed.
