Provided are an apparatus for preparing dubu(bean curd), and a method for preparing dubu to improve the quality and taste of dubu and to enhance the period of circulation without using a defoaming agent. The apparatus employing pressure reduction, condensation, degassing and concentration, is such that the dubu raw material solution where bubbles is generated is flown into a tank, and is provided with a bubble remover(10) which reduces the pressure of the inside of the tank to vacuum for expanding the bubbles of the dubu raw material solution flown into the tank by the difference of the internal pressure and external pressure of bubbles and breaking the expanded one, thereby liquefying the bubbles.
