摘要 Disclosed is a process for producing soybean milk having an increased content of a hydroxy unsaturated fatty acid having 18 carbon atoms such as trihydroxyoctadecenoic acid and trihydroxyoctadecadienoic acid. A process for producing soybean milk comprising: the suspension step in which crushed soybean is dispersed/dissolved in water to prepare a soybean slurry; and the separation step in which the soybean slurry produced through the suspension step is separated to give soybean milk as a supernatant, at least one unsaturated fatty acid selected from the group consisting of linoleic acid and linolenic acid being added to the soybean slurry before the separation step and the resulting mixture being retained at such a temperature that an enzyme contained in the soybean slurry can be activated.
