<P>PROBLEM TO BE SOLVED: To provide an α-glucosidase inhibitor giving no influence on gustatory sense in taste, scent and the like, eatable without modification as a simple body even in a bean state or a powdery state, and having a function inhibiting elevation of the level of blood sugar. <P>SOLUTION: The α-glucosidase inhibitor is made of soybeans as a raw material for producing rice malt, and has soybean monascus obtained by culturing the soybeans via filamentous fungi belonging to the genus Monascus, and/or its extract as active ingredients. <P>COPYRIGHT: (C)2007,JPO&INPIT |
