PROBLEM TO BE SOLVED: To provide a method and device for evaluating an object capable of evaluating the gel state, sol state, or sol-gel state variation of a gel-like object and sol-like object, non-destructively, in a non-contact manner, speedily, and accurately. SOLUTION: The device for evaluating an object comprises a light source 3 for radiating coherent light 2 to the gel-like or sol-like object 1, a sensing means 4 for intermittently or continuously measuring light intensity distribution in an imaging face of the light 2, and a signal processor 5 that compares two or more light intensity distribution signals of different measured times output from the sensing means 4 with each other, determines time fluctuation of the light intensity distribution by calculation, and evaluates the gel state, sol state, or sol-gel state variation of the object based on the time fluctuation of the light intensity distribution.
