PROBLEM TO BE SOLVED: To provide a vacuum cooler, capable of performing uniform cooling in a short time in a case such that a liquid food material is vacuum cooled in a deep container, or a liquid food material with high viscosity is vacuum cooled. SOLUTION: The vacuum cooler comprises a processing tank 3 storing the container 2 containing the liquid food material 1 as a cooling object, a decompression means 4 reducing the pressure in the processing tank 3, a pressure restoration means 5 restoring the pressure in the decompressed processing tank 3, and a stirring means 6 stirring the liquid food material. The stirring means 6 is provided with a stirring blade 13 rotating within the container 2 containing the liquid food material 1. Otherwise, the liquid food material 1 can be stirred by injecting air from the bottom of the container 2 and using the rise of bubbles thereof. COPYRIGHT: (C)2007,JPO&INPIT
