PURIFICATION METHOD AND PRODUCTION METHOD FOR CELLOBIOSE

A method for the purification of cellobiose comprising the steps of: (A) preparing a cellobiose-containing sugar solution; (B) adjusting the content of cellobiose in the cellobiose-containing sugar solution to 50% by mass or mor e relative to the total sugar content; and (C) crystallizing cellobiose from t he solution; and a method for producing cellobiose having a high .alpha.-anomer ratio, the method comprising the step of drying a cellobiose-containing suga r solution having a cellobiose content of 90% by mass or more relative to the total sugar content while the temperature is kept at 80 to 95~C. It becomes possible to purify cellobiose from a cellobiose-containing sugar solution at low cost with dramatically improved purity and yield without the need of complicated processes. It becomes also possible to produce cellobiose having a high solubility in water.
