<P>PROBLEM TO BE SOLVED: To provide dried persimmons having clear madder red, favorable taste and no mold. <P>SOLUTION: The vivid madder-red dried persimmons are obtained through the following process: putting peeled fresh persimmons in lines in humid warm winter; hanging the persimmons in a room after antioxidation, bleach and sterilization or no treatment, forcedly draining the persimmons with a dehumidifier at a room temperature of ≤5°C in humidity of ≤30% for 36-48h to dry the outer surfaces of the fresh persimmons; subjecting the peeled persimmons initially dried to indoor far-infrared radiation dry for 10-20 days; or subjecting the peeled persimmons to indoor far-infrared radiation dry for 7 days after outdoor dry for 10-14 days followed by subjecting the persimmons to finish dry in dehumidified cool air for 36-48h so as to obtain sweet dried persimmons with clear madder red and no mold. <P>COPYRIGHT: (C)2007,JPO&INPIT |
