Provided is a fermented food using brine water obtained by nanofiltration, which shows excellent appearance including taste, flavor and color, has improved shelf life, and contains a reduced amount of salt. The fermented food is provided by using brine water obtained by filtering brine water through a nanofiltration membrane so that the food has an improved shelf life and serves as a low-salt content functional fermented food. The fermented food includes any one of soy sauce, soybean paste and hot pepper paste. In the method, the nanofiltration is preferably carried out under a pressure of 0.5-20 Mpa at a temperature of 5-20 deg.C. |
