Dietetically balanced milk product of which the lipid part comprises a mixture of milk fats and oils selected so as to observe an equilibrium between all the lipid families able to provide essential fatty acids in physiologically optimum proportions and to regulate the metabolism of fatty acids. This product which has low atherogenicity and thrombogenicity indices is particularly suitable for the prevention of cardiovascular risks.
