METHOD FOR HEAT TREATING A PRODUCT CONTAINED IN A PACKAGE SUCH AS A TRAY

The tray (1, 2) has at least one deformable wall (2). The method consists in heating the product (3) contained in the tray by allowing the vapour produced by heating to escape through an opening (4A) of the package. The product (3) is heated by bringing it to a desired temperature, the temperature is maintained by allowing the vapour to escape, a gaseous fluid (F) is introduced into the package at the end of the temperature maintaining step and the package is hermetically sealed.
