<P>PROBLEM TO BE SOLVED: To provide a method for producing catechin-containing foods and drinks, containing catechin at a high concentration and excellent in flavor, nutriment and smell. <P>SOLUTION: The method for producing catechin-containing foods and drinks comprises preparing a catechin solution containing ≥500 mg/L total of (-)EGCg, (-)ECg, (-)GCg and (-)Cg as ester-type catechin catechin esters, heat-treating the catechin solution at ≥80°C, then, concentrating and drying the solution. <P>COPYRIGHT: (C)2007,JPO&INPIT |
