PROCESS FOR TREATING DRIED ANCHOVY USING HOT-WATER EXTRACTS OF SAFFLOWER SEEDS

A process of manufacturing dried anchovy with improvement of bone based diseases is provided to produce the dried anchovy with enhanced storage stability and effect of improving bone based diseases including bone fracture, osteoporosis, osteogenesis imperfecta, etc. by impregnating the dried anchovy with hot-water extract of safflower seeds. The process comprises the steps of: dipping dried anchovy in concentrated hot-water extract of safflower seeds of 1 to 4deg. Bx alone or a solution mixture that contains the safflower seeds extract and anti-microbial agent in an amount of 1 to 5wt.% based on total content of the concentrated hot-extract. Alternatively, the process comprises the steps of: concentrating hot-water extract of the safflower seeds of 1 to 4deg. After obtaining the hot-water extract from the safflower seeds; adding sodium chloride to the concentrated extract or the solution mixture to have salinity ranging from 1 to 3%; dipping the dried anchovy in the concentrated extract or the solution mixture with controlled salinity; and dehydrating and drying the impregnated anchovy at 60-65deg.C for 2-4 hours.
