A dried meat processing machine designed to automatically mix meat and spice for a specified time in a stirring kettle in which a vacuum is maintained while automatically aging and drying them is provided. The processing machine is easy and convenient to work and can make dried meat products on the spot. The dried meat processing machine consists of: an agitating apparatus(10) having an agitation cabinet(11), agitator(18) and kettle receiving part(18a); a rotational driving part for agitator for rotating the agitator in at least one direction; a stirring kettle(26) removably connected to the kettle receiving part and which receives meat and spices and has a cover(31); a vacuum-maintaining part for selectively maintaining vacuum inside the stirring kettle; a rotational driving part for stirring kettle for rotating the stirring kettle to mix the meat and spice in a state in which a vacuum is maintained inside the stirring kettle; and an agitation control part(40) for controlling the rotational driving part for agitator and rotational driving part for stirring kettle. The agitator is installed on one side of the agitation cabinet. The rotational driving part for agitator has a first driving motor, first driving sprocket, first driven sprocket and first chain for connecting the first driving and first driven sprocket.
