<P>PROBLEM TO BE SOLVED: To provide a liquid composition containing polyglycerol fatty acid monoester at a high concentration which has bacteriostatic action to microorganisms causing degeneration of food, wherein the composition causes neither separation nor precipitation even if being preserved for a long period. <P>SOLUTION: The preservability improver for foods comprises (a) polyglycerol fatty acid ester which is an ester of polyglycerol with a fatty acid and has 2-3 average polymerization degree and ≥50 mass% monoester content in the ester, (b) a thickener stabilizer and (c) water. <P>COPYRIGHT: (C)2007,JPO&INPIT |
