The high oil concentration production by e.g. fish processing treatment comprises hot pressurizing by direct steam injection, followed by instant depressurizing via a valve linking the sealed treatment chamber with a vacuum tank by means of a large-cross-section pipe. Also claimed is the product of the process. The product is accompanied by a high-protein substance with low fatty residue formation, and production of water.
