<P>PROBLEM TO BE SOLVED: To provide a method for rapidly and accurately evaluating turbidity stability in brewage and its manufacturing process, and also to provide a method for selecting yeast having superb turbidity stability. <P>SOLUTION: The amount of mannoprotein having a molecular weight of approximately 120 kDa in a sample is measured by an affino plotting method. By measuring the amount of mannoprotein in culture supernatant, yeast having a small amount of mannoprotein is selected, and yeast having improved turbidity stability is selected. The amount of the separation of mannoprotein from the yeast is measured, thus selecting the yeast having a small amount of separation of mannoprotein. <P>COPYRIGHT: (C)2007,JPO&INPIT |
