<P>PROBLEM TO BE SOLVED: To provide polished rice retaining tasty components and nutrient components where a sub-aleurone cell layer and a germinal disk remain on a rice grain: to provide a method for producing the polished rice: and to provide a device for producing the polished rice. <P>SOLUTION: The polished rice retaining tasty components and nutrient components is obtained through eliminating epidermis 1, peel 2, seed coat 3 and even an aleurone cell layer 4; leaving a semi-aleurone cell layer 5 lying between the aleurone cell layer 4 and a starch cell layer 6 to coat the surface of the rice grain. The polished rice comprising wash-free rice comprises the one having whiteness of ≥41, and is fully cooked to have yellowness of 13-18. The polished rice is formed so that the surface of the rice grain is almost covered with the semi-aleurone cell layer 5 and the total number of the rice grains each retaining the germinal disk 9 or a surface part-removed embryo 8 accounts for ≥50 wt.%. <P>COPYRIGHT: (C)2007,JPO&INPIT |
