PROBLEM TO BE SOLVED: To provide an antioxidant for food imparting long-term excellent oxidative stability to food and containing no chemical antioxidant having anxiety of effect on living bodies, and to provide oil-in-water emulsified food eatable by consumers without anxiety and avoidance and excellent in long-term oxidative stability.

SOLUTION: This antioxidant for food has phosphatidyl serine as an active ingredient. The oil-in-water emulsified food excellent in oxidative stability comprises an emulsified water phase and an emulsified oil phase and contains the antioxidant for food.
