PROBLEM TO BE SOLVED: To provide a cutting blade unit of a noodle making machine which improves sanitary conditions and is inexpensive in cost of installation and maintenance while ensuring a sharp edge equivalent to that cut with a knife by a skilled technician on the cross section of a noodle strip. SOLUTION: The cutting blade unit is compose of an axially rotating cut groove roller 3 which forms a lot of one round of cut grooves 31 at equally spaced interval along the axial direction, and a cutting blade roller 4 which rotates in the opposite direction in such a state that it is disposed in axially parallel to the cut groove roller and fitted in a predetermined depth. The peripheral speed of an abutting part of the cut groove roller and the cutting blade roller is set so that the peripheral speed of the cutting blade roller side becomes. Moreover, in the rotating radius from the rotating shaft of the cut groove roller and the cutting blade roller to the abutting part, the rotating radius of the cutting blade roller is set to be small, and the outer peripheral diameter of the cutting blade roller is set to be smaller than that of the cut groove roller.
