PROBLEM TO BE SOLVED: To provide a heating cooking device capable of optionally changing the state of a material to be heated in completion of heating. SOLUTION: The heating cooking device is provided with a heating chamber 2 for storing placement means 4a, 4b for placing the material to be heated (not shown); a vapor generation means 10 for generating vapor fed into the heating chamber 2; heating means 3a, 3b for heating air and the vapor or the stored material to be heated in the heating chamber 2; and a control means (not shown) for controlling the vapor generation means 10 and the heating means 3a, 3b. The control means has a step for bake-heating/cooking the material to be heated and includes a step for exposing the material to be heated in the steamed state at an initial stage of heating of the bake-heating/cooking. The vapor in the step for exposing it to the steamed state is condensed on a surface of the material to be heated and since salinity and fat contained in the material to be heated elute to the condensate, in the same step, an amount of condensate condensed on the surface of the material to be heated is varied by varying an amount of fed vapor. Thereby, an amount of salinity, an amount of fat or various nutrition components possessed by the material to be heated is optionally changed according to favor in completion of heating.
