摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing fermented condiments such as fish soy using a marine protein raw material, effectively prevented from deterioration in a law salted condition and having excellent deliciousness. <P>SOLUTION: This method for producing the fermented condiments comprises producing malt by inoculating seed malt to a steamed condiment raw material and performing lactic fermentation by inoculating lactic acid producing bacteria thereto, and fermenting the product through preparing with common salt.
