<P>PROBLEM TO BE SOLVED: To provide a method for producing fermented condiments such as fish soy using a marine protein raw material, effectively prevented from deterioration in a law salted condition and having excellent deliciousness. <P>SOLUTION: This method for producing the fermented condiments comprises producing malt by inoculating seed malt to a steamed condiment raw material and performing lactic fermentation by inoculating lactic acid producing bacteria thereto, and fermenting the product through preparing with common salt. As the condiment raw material, the marine protein raw material is used, and an enough amount of a carbohydrate material to increase/activate the seed malt and the lactic acid producing bacteria is charged in a specific process. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
