<P>PROBLEM TO BE SOLVED: To solve problems that conventional konjak has a malodor such as a putrid odor of fish and is disliked as an unpleasant odor by a plurality of people, to provide a deodorized konjak without the malodor peculiar to the konjak and to provide a method for producing the deodorized konjak. <P>SOLUTION: Konjak powder is charged into a solution comprising a mineral liquid consisting essentially of bivalent iron added to water and swollen for 60-90 min. During the time, trimethylamine which is an ingredient of the malodor contained in the konjak powder is decomposed. The mineral liquid is dissolved even in a solution of calcium hydroxide which is a coagulant for the konjak and mixed therein in a kneader. The konjak coagulated by heating becomes the konjak without the malodor peculiar to the konjak. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
