HEATED SWEET-POTATO FRAGRANT WATER, AND METHOD FOR PRODUCING FOOD USING THE HEATED SWEET-POTATO FRAGRANT WATER AS RAW MATERIAL

PROBLEM TO BE SOLVED: To provide heated sweet-potato fragrant water obtained by effectively utilizing steam containing fragrant ingredients of the sweet potato which has not been used in a steaming process of sweet potato in the past.

SOLUTION: The heated sweet-potato fragrant water is obtained through the following process: condensing steam emitted out of a steamer when steaming sweet potatoes with steam and containing fragrant ingredients of the steamed potatoes passing through a sweet potato-placing layer at a high temperature of ≥80°C to generate steam so as to obtain condensed water eliminated in greenly smell and having fragrance peculiar to steamed potatoes to enable the condensed water to be effectively utilized as raw material water for various kinds of food processing requiring sweet potato flavor.
