FIELD: pectin production. ^ SUBSTANCE: dry pectin extract is subjected to six-step extraction with aqueous ethanol solution under the next process parameters: 1) 35-40 % solution, pH 2-2.5; temperature of 45-50°C, and solid/liquid phase ratio of 1:(1-1.5); 2) 45-50 % solution, pH 2.5-2.8; temperature of 50-55°C, and solid/liquid phase ratio of 1:(1.5-2); 3) 55-60 % solution, pH 2.8-3, temperature of 40-50°C, and solid/liquid phase ratio of 1:(2.5-3); 4) 65-75 % solution, pH 3-3.2; temperature of 50-55°C, and solid/liquid phase ratio of 1:(2-2.5); 5) 75-80 % solution, pH 3.2-3.5; temperature of 45-50°C, and solid/liquid phase ratio of 1:(2-2.5); 6) 80-85 % solution, pH 3.2-3.5; temperature of 30-40°C, and solid/liquid phase ratio of 1:(1-2.5). Isolated solid phase is further dried. ^ EFFECT: pectin of increased complexing ability. |
