PURPOSE: A method of processing pork belly in the shape of a horse's hoof by cutting a pork belly part with thick stripes of pure white fat and rosy meat to a predetermined size, covering with a vinyl film or a hygienic fabric and then aging is provided. The pork belly product has a good appearance like a horse's hoof to cause the desire for eating without lowering meat quality. CONSTITUTION: A slab of pork belly is cut to a predetermined size of about 5kg with a rectangular shape, transversely folded and then aged at -2deg.C for 24hr in a refrigerator after covering with a vinyl film or a hygienic fabric. Then, the frozen pork belly strips are sliced into a predetermined size of 8 to 10mm to give frozen pork belly with the shape of a horse's hoof. |
