PROBLEM TO BE SOLVED: To provide a method for producing coffee extract suppressing too much acid, and efficiently producing highly concentrated coffee extract. SOLUTION: The method for producing coffee extract comprises the following process: (1) a first process of subjecting coffee powder to drip extraction with heated water so as to obtain first extract; and (2) a second process of subjecting powdered coffee beans having the same kind and roasting temperature as those of the powdered coffee beans used in the first process to drip extraction so as to obtain second extract.
