<P>PROBLEM TO BE SOLVED: To provide new action of an oil and fat composition containing oleic acid and linolenic acid. <P>SOLUTION: This oil and fat composition contains ≥55 wt% (more preferably ≥77 wt%) of oleic acid and ≤0.5 wt% of linolenic acid. The oil and fat composition has flavor improving action such as reinforcement/retention of taste such as salty taste, sweet taste, deliciousness, acid taste and hot taste, reinforcement/retention of flavor and decrease of oiliness. As a result of this, it is possible to improve the flavor of food by using the oil and fat composition when producing/cooking the food.
