SOYBEAN PROCESSED PRODUCT IMPROVED IN FUNCTIONALITY

摘要

PROBLEM TO BE SOLVED: To provide a soybean processed product improved in functionality produced from soybean-derived raw material and having a lot of physiologically excellent functions, and to provide edible concoction containing such a soybean processed product.

SOLUTION: The soybean processed product improved in functionality is obtained by subjecting the soybean-derived raw material to hydrothermal treatment under subcritical or supercritical condition at ≥180°C for 0.001 sec. to 60 min.. The edible concoction contains the soybean processed product.
