<P>PROBLEM TO BE SOLVED: To provide a method for sterilizing cut bean curd for suppressing decay/deterioration of cut bean curd produced by an ordinary method and keeping for a long time. <P>SOLUTION: This method for sterilizing the cut bean curd comprises a process of sealing in a bean curd container silk-strained bean curd or rough-grained bean curd produced by adding bittern to soymilk obtained by boiling (first heating) soybeans followed by coagulating, cooling the product in cold water, retaining the product for fixed time at normal temperature and heating (secondary heating) the product at low temperature. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
