METHODS FOR PRODUCING POTATO OR OTHER VEGETABLE COMPOSITIONS AND PRODUCTS THEREOF

Methods are provided for producing an extrudable raw potato or vegetable composition having mechanical properties for maintaining structural integrity upon processing, the composition comprising carbohydrates derived substantially only from potatoes, comprising, size-reducing raw potatoes or vegetables to a average particle size of less than about 10 mm in at least one dimension to produce a raw potato or vegetable particulate; and mixing at least one drying agent with said raw potato or vegetable 'particulate to form the extrudable raw potato or vegetable composition. Products and uses of the extrudable raw potato or vegetable composition are further provided.
