<P>PROBLEM TO BE SOLVED: To provide an emulsifying technique which permits an interface between a functional oil agent and water, a functional particle and water or the like to form an emulsifying and dispersing system excellent in thermal stability and long-term stability, regardless of a required HLB of the functional oil agent or the functional particle. <P>SOLUTION: The emulsifying dispersant comprises a vesicle derived from an amphiphilic substance having a self-organizing function or a single-particulate bio-polymer as a principal component. A derivative of polyoxyethylene hardened caster oil having an average number of additive molecules of ethylenoxide of 5-15, a halogen salt of a dialkyldimethylanmonium having an alkyl-chain length of 8-22 or an alkenyl, and a particle prepared from a phospholipid and its derivative are used for obtaining the amphiphilic substance having a self-organizing function. An emulsion excellent in thermal stability and long-term stability can be formed by forming a three-phase structure of a water phase, an emulsifying dispersant phase and an oil phase on the emulsion surface. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
