<P>PROBLEM TO BE SOLVED: To provide a vacuum soaking device designed so as to perform stable soaking treatment in a short time, in particular, stable and sanitary impregnation of cooked rice with water in a short time without spoiling taste. <P>SOLUTION: The vacuum soaking device is provided with a processing tank 3 where crops 1 are soaked in soaking water 2 and stored, a pressure-reducing means 8 in the processing tank 3, a pressure-restoring means 9 in the processing tank 3, and a sensor 16 detecting pressure or temperature in the processing tank 3. In the device, the crops are soaked while the pressure-restoring means 9 is controlled based on detected signals from the sensor 16 to reduce the pressure and also temperature in the processing tank 3 into set ones and keep the reduced pressure and reduced temperature as they are only for setup time when the pressure in the processing tank 3 is reduced by the pressure-reducing means 8. The device is provided with a bypass path 17 connecting the upper part and the lower part of the processing tank 3, and a circulation pump 18 for forcibly circulating the soaking water 2 via the bypass path 17 so as to circulate the soaking water 2 when the pressure in the processing tank 3 is reduced. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
