PROBLEM TO BE SOLVED: To provide a new carnosine ester compound exhibiting inhibitory activity against Maillard reaction caused by diabetic complication such as peripheral circulatory disturbance, cerebrovascular disease, nervous disease and cataract and aging of the skin and useful in fields of medicines, quasi-drugs, cosmetics and foods. SOLUTION: The carnosine ester compound is represented by general formula (A) (wherein X is -CH<SB>2</SB>CH<SB>2</SB>- or -CH=CH-; n is 2 or 3; R<SP>1</SP>is a 1-8C hydrocarbon group which may have a branched or unsaturated bond; R<SP>2</SP>is a hydrogen atom or a methyl group).
