PROBLEM TO BE SOLVED: To settle the problem that as yeast used for baking is excellent in fermentation ability but yeast having ability of producing flavor component and trehalose does not exist, so production of dough, frozen dough and bread imparted with trehalose functionality is difficult. SOLUTION: The method for producing dough, frozen dough and bread uses trehalose high production yeast Saccharomycescerevisiae GITC-1-6.
