ANTIOXIDANT CONTAINING HORSERADISH EXTRACT

摘要

PROBLEM TO BE SOLVED: To provide an antioxidant which has excellent safety and solves a problem that it is difficult to industrially stably obtain conventional natural substance-derived antioxidants in large amounts and a problem that synthetic antioxidants are shunned by consumers from the aspect of safety.

SOLUTION: An extract having an anti-oxidizing action is obtained from a horseradish (Cochlearia armoracia L.) which is a cruciferous perennial plant. The antioxidant is characterized by containing the extract.
