<p><P>PROBLEM TO BE SOLVED: To provide a new miscellaneous cereal Shochu improved in smell of conventional Shochu and excellent in scent, taste, mellowness and the like, and to provide a method for producing the same. <P>SOLUTION: The miscellaneous cereal Shochu is obtained, in the production step of the second class of Shochu, by mixing an unrefined Shochu obtained from naked barley with a miscellaneous cereal (foxtail millet, barnyard millet, millet, adlay, buckwheat, corn or red rice), fermenting the mixture, and then distilling the product. The miscellaneous cereals are preferably pulverized and then mixed with the unrefined Shochu. The alcohol content is adjusted to 21-23% or 27-29%. <P>COPYRIGHT: (C)2006,JPO&NCIPI</p> |
