摘要 A plastic shortening comprises mainly, e.g. 85 to 87%, by weight, of partially hydrogenated soft fat, e.g. having an I.V. (iodine value) between 80 and 95, blended with a small proportion, e.g. 9 to 11%, of fully hydrogenated, interesterified, hard fat, e.g. having an I.V. not more than 5, the soft and hard fats being derived from soyabean oil. The plastic shortening may also comprise up to 5%, preferably between 3.5 and 4.5%, of an emulsifier such as fatty acid mono-diglycerides, e.g. derived from cotton seed oil having an I.V. of 74 to 76 or from hydrogenated soyabean oil having an I.V. of 85. Substantially all crystalline solids present in the shortening may be in the beta crystalline phase. The shortening may be made by melting a blend of the ingredients and pumping the melt through a refrigerated tube, e.g. from which it may issue at a temperature between 27 DEG and 33 DEG C., into containers, wherein it is tempered or conditioned at 32 DEG C. for 2 to 5 days and, if desired, stored at 21 DEG C., e.g. for 1 day. Interesterified soyabean oil is made by maintaining substantially completely hydrogenated soyabean oil at a temperature of 90 DEG C. for one hour, in the presence of sodium methoxide.ALSO:A plastic shortening comprises mainly, e.g. 85 to 87%, by weight, or partially hydrogenated soft fat, e.g. having an IV (iodine value) between 80 and 95, blended with a small proportion, e.g. 9 to 11%, of fully hydrogenated, interesterified, hard fat, e.g. having an IV not more than 5, the soft and hard fats being derived from soyabean oil. The plastic shortening may also comprise up to 5%, preferably between 3.5 and 4.5%, of an emulsifier such as fatty acid mono-diglycerides, e.g. derived from cottonseed oil having an IV of 74 to 76 or from hydrogenated soyabean oil having an IV of 85. Substantially all crystalline solids present in the shortening may be in the beta crystalline phase. The shortening may be made by melting a blend of the ingredients and pumping the melt through a refrigerated tube, e.g. from which it may issue at a temperature between 27 and 33 DEG C, into containers, wherein it is tempered or conditioned at 32 DEG C for 2 to 5 days and, if desired, stored at 21 DEG C, e.g. for 1 day. A cake is made from the following ingredients, measured in grams: 200 flour, 250 sugar, 14 baking powder, 4 salt, 95 plastic shortening according to the invention, 170 milk, 210 egg white, 4 almond flavour.
