The vegetable loaf is made by placing strips of a vegetable such as courgette or aubergine, cooked e.g. by frying until golden brown, inside and across a loaf-shaped mould, with their ends projecting over the edges. This is followed by a filling (18) of chopped and cooked vegetables and/or mushrooms, with an optional core (20) of whole cooked vegetables such as courgettes, aubergine or peppers, with the ends of the strips folded over it to complete the loaf (14). The loaf is deep frozen and can be cut into slices while still frozen and then allowed to thaw before eating, or it can be before thawed first and then sliced. |
