An industrial bakery has baking trays stacked on a first rack resting on a discrete wheeled base. The first rack is positioned in-line with a second rack (3) inside an oven. The baking trays in the first rack are simultaneously transferred from the first (19 to the second (3) rack by power lever (11) action delivered by an adjacent wheel-mounted unit (10). The lever arm terminates in a vertical shield that engages with the individual shelves by push/pull hooks.
