摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing transparent royal jelly solution excellent in transparency, slightly causing increase of a yellowness or reduction of transparency due to heating or leaving at a room temperature, and suitable for being added to drink, especially to acidic drink in comparison with a conventional one, and exhibiting the same antioxidant action as that of raw royal jelly, and to provide royal jelly powder. <P>SOLUTION: The method for producing transparent royal jelly solution comprises adding an acidic protease, the optimum pH of which is close to pH of water suspension, to royal jelly suspension, and maintaining the temperature of the mixture at 50-60&deg;C for 10-24 hours. The royal jelly powder is obtained by freezing and drying the transparent royal jelly solution produced by the method.
