<P>PROBLEM TO BE SOLVED: To inexpensively provide fermentation-processed vegetables with functionality expressed because naturally fermented raw vegetables are used as a fermented mass, wherein the functionality is such as to markedly ameliorate diarrhea and constipation caused by digestive ulcer and stress-related gastrointestinal disorders by intake and also have digestive effect, therefore having no adverse side effects even if taken over a long period. <P>SOLUTION: The fermentation-processed vegetables are provided, being produced by the following process: Harvested raw vegetables are let aged and then subjected to pretreatments including washing, chopping and grinding to effect natural fermentation in advance. The resultant vegetables are dried and powdered, or made into a concentrate, and then admixed with saccharide(s) and an organic acid into a paste, which is adjusted to below pH7 as a pH level within optimum activity. The resultant paste is aerobically mixed and agitated to promote further fermentation into a fermented precursor, which is then put into a container, where the precursor is further fermented and aged into a fermented mass, thereby the above-mentioned functionality is expressed. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
