摘要 <P>PROBLEM TO BE SOLVED: To provide an effective and economic method for producing a low DE starch decomposition product having properties such as low sweetness, low viscosity and free from clouding caused by aging and easy to handle, and to provide a food comprising the decomposition product, and a new white dextrin. <P>SOLUTION: The invention relates to the method for producing the starch decomposition product comprising a heating treatment of raw starch comprising &ge;80% by mass of starch, &le;0.20% by mass of protein and &le;0.20% by mass of lipid, in the presence of hydrochloric acid to obtain white dextrin with &ge;80 of whiteness, 3-6 of DE, &ge;90% by mass of cold water soluble part, 30-45% by mass of branched component and &le;0.1% by mass of protein, and a treatment acting &alpha;-amylase to the product.
