<P>PROBLEM TO BE SOLVED: To provide an effective and economic method for producing a low DE starch decomposition product having properties such as low sweetness, low viscosity and free from clouding caused by aging and easy to handle, and to provide a food comprising the decomposition product, and a new white dextrin. <P>SOLUTION: The invention relates to the method for producing the starch decomposition product comprising a heating treatment of raw starch comprising ≥80% by mass of starch, ≤0.20% by mass of protein and ≤0.20% by mass of lipid, in the presence of hydrochloric acid to obtain white dextrin with ≥80 of whiteness, 3-6 of DE, ≥90% by mass of cold water soluble part, 30-45% by mass of branched component and ≤0.1% by mass of protein, and a treatment acting α-amylase to the product. The invention relates to the food comprising the decomposition product, and to the white dextrin with ≥80 of whiteness, 3-6 of DE, ≥90% by mass of cold water soluble part, 30-45% by mass of branched component and ≤0.1% by mass of protein. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
